   I have come to the conclusion that if there is a website for something, someone on this board is into it.  Grin

I have tried many different hot sauces in my day. It was one of those fun things you can play with on the cheap so I tend to pick up a new bottle fairly regularly. So what are your favorite hot sauces and peppers and what do you use them for?

  Back in my heavier days I used to eat like half a box of triscuts a day accompanied by some sharp cheddar and Dave's insanity sauce. I used to love this.  I haven't had Dave's in a while though so I can't really remember what it tasted like other than face melting hot.

  I am currently working down three bottles right now. All pretty hot sauces, and all I enjoy with different things.

   I have a bottle of Yucatan sunshine. It has a really fruity flavor and a heavy vinegar presence. I love this stuff on roast beef or turkey sandwiches and it goes great on chicken kafta.

  I am having a hard time getting used to Melinda's XXXXreserve. It is good sauce, but it is uber hot. It kinda smells and taste like habanero V8 though. It is currently my new pizza hot sauce. Mixed with some curry ketchup for fries, and it did nicely in rescuing an order of Cavapi from Bosnia Specialties when they fergot to give me the sauce that normally comes with the sandwich.

  I also have my heat go to which is El Yukateco. I love this one, it is earthy and really hot. This stuff is a must for a steak and cheese grinder, pierogi's, and fried chicken. I use this stuff in my chicken and dumplings, not in the recipe though, just pour it on each dumpling once I get them in the spoon.

   So does anyone else have a thing for hot sauce?

Pure Cap is just a brand name. It's not even close to being "straight capsaicin". In fact, Pure Cap is very weak even compared to what you can buy at a common grocery store.

'Blair's 16 Million Reserve' is pure capsaicin..... though, now we're not even talking sauce

Here's one of the the last extracts I made (about 2 months ago). This is 1/2 pound of habenero filtered and reduced. I made one shortly after with ghost peppers that is pretty ridiculous:

this stuff is normally way too potent to use by itself. i'll usually add it into other sauces (or whatever) that i like that are already made.
although, if you can stand the heat these extracts usually have a really good pepper taste on their own because it's so fresh and so condensed.

i am a blair's hot sauce fan, and stock roughly 5 kinds in my fridge at any time, depending what i'm in the mood for.


the hottest i can stand is this...






it's pretty hot. i don't pour it on anything, but i like to use it in salsas and i've tried it in a salad dressing, which was interesting, but not something i'd do again. that's the stuff i use if i want to get crazy with the heat. for more everyday use, though, i go with this on eggs, tacos, whatever. it's super mild but full of flavor....





someone said you can get this stuff at fire in the market but i just order online. it usually shows up in 3 days and they run deals on their products from time to time. i'm pretty loyal to this brand, but if i'm eating breakfast out somewhere i put franks red hot on the hash browns.

Go easy on it. It has good flavor, but there is a reason the ship on the bottle is on fire. One drop on an egg is plenty for me. 3-4 drops in a bowl of chili.

It hasn't been "Fire in the Market" for awhile. I forgot what it's called now. They do sell it there along with other hot sauces, bbq sauces and incenses. They must have been robbed a few times cuz they're behind bullet proof glass.
